COTTON CANDY: is an all time American favorite. Cotton candy is one of those amazing foods that seems like magic until you know the secret. Cotton Candy is made from Floss Sugar or Flossine mixed with granulated sugar. The sugar is first melted to a liquid. His wife Mary created many flavors of fresh syrups to flavor his finely shaved artificial "snow". "Snow balls" have been popular in New Orleans ever since. Hansen continued to sometimes works at the origininal "Hansen's Sno-Bliz" in Uptown New Orleans through 2005, although his granddaughter has taken over much of the workload. Eventually, "Snow balls" became known as "sno-cones", and their popularity grew worldwide. Usually, the snow cones are sold at stadiums, festivals, carnivals, church funtions, coliseums, Ice cream vans or by car peddlers at parks. How to make snow cones Fill the hopper to within an inch of the top with ice cubes or block ice (no larger than 3" to 4"). The larger the pieces are, the better the snow. Switch the motor on. Wait for the motor to come to full speed (a minute or so). Push the pusher handle down against the ice in the hopper. Apply firm and even pressure to make the best snow. Practice will allow you to gauge when to stop pressing. This allows the ice to resettle against the shaver head. You may find that you need to relieve the pressure two or three times in a cycle.
